Vitamin D is a fat-soluble "vitamin" which is synthesised endogenously from cholesterol. Due to its origin, its synthesis and its functions, it is related to steroid hormones. Part of the requirement is covered by photochemical synthesis of vitamin D in the skin. Human migration from Central Africa to the north has led to a lightening of the skin and thus to a more "effective" utilisation of UV rays. Nevertheless, the intensity of sunlight in winter in Europe is not sufficient to cover the demand! The formation is also strongly dependent on the time spent outside, the time of day, the altitude and latitude, the season, the air pollution, the type of clothing, the pigmentation of the skin, the age, the cloud cover and the sun protection applied (with permanent use of SPF 15, vitamin D production is reduced by 99.5%).

In the EsKiMo study conducted by the Robert Koch Institute and the University of Paderborn, the nutrient intake of children was analysed. In the group of 6-11 year olds, 100% of the test subjects were below the daily nutrient intake recommended by the German Nutrition Society. Studies on adults also show an undersupply of vitamin D - especially in the winter months.
