Protein concentrate made from fish collagen for healthy cooking
Gelatine is indispensable in fine cuisine. Delicately melting creams and equally melt-in-the-mouth cakes that are nevertheless firm to cut are almost impossible to achieve without it. Starch as a binding agent has completely different properties and even agar agar or pectin do not produce the same fine consistency.
But there are also differences in the types of gelatine. The usual bovine gelatine binds much harder and the food is nowhere near as tender. And pork gelatine is taboo for Muslims, Jews and many other people who simply don't like pork.
Fish gelatine is an ideal substitute here, as it is not only healthier but also has much better cooking properties than conventional gelatine. Premium fish gelatine is a purified protein concentrate obtained from fish collagen. Collagen proteins are the most abundant protein structures in humans and animals. Premium fish gelatine contains the complete amino acid profile of collagens, is gluten-free, additive-free, odourless and tasteless. It is also naturally free from cholesterol and virtually free from carbohydrates and fat, and is kosher and halal.
Raw material quality
Every production batch is checked for residues. Heavy metals are well below the limit. The same applies to microbiological contamination, e.g. the product is guaranteed salmonella-free.
The raw materials used are 100% traceable. No unreliable raw material sources from Asia are used; the raw materials, i.e. fish skins, come from European aquaculture. Of course, the product is not vegan, but no fish has to die just for this fish gelatine. The fish skins are exclusively a by-product of the fish fillet production process.
Use
Premium fish gelatine is well tolerated and can be used anywhere in the kitchen where gelatine is required. Heating to over 80 ºC should be avoided, as otherwise the gelling properties will be lost. Premium fish gelatine is also an excellent ingredient for home-made protein and vitality shakes.
To enhance and enrich your daily diet, stir 1 tablespoon (approx. 10 g) of fish gelatine powder into approx. 200 ml of water, juice, almond, oat or rice milk or into muesli, yoghurt or quark. Just like gelatine from other sources, fish gelatine powder can also be used to prepare jellies and cream dishes. Use the quantities specified in the recipe. Depending on the desired firmness, use between 15 and 30 g per litre of liquid.
Of course, fish gelatine can also be taken as a pure food supplement and is more appetising for many people than the products otherwise recommended for this purpose, i.e. gelatine powder as a waste product from pigs and cattle in factory farming. However, taking it in the form of delicious products, e.g. from Verena Geistlich's low-carb kitchen, is certainly more fun than taking powder mixed in water and has the same positive effects. We therefore recommend that you always prefer this form of intake!
