Arabinitol occurs as a sugar alcohol in the form of D- and L-arabinitol. These can also be detected in small quantities in the serum and urine of healthy people. If there is an increased colonisation of yeasts in the small intestine, the D-arabinitol concentration also increases. The reason for this is that only D-arabinitol is produced by Candida spp. such as Candida albicans, C. tropicalis and C. parapsilosis.
If the concentration of D-arabinitol increases, its ratio to L-arabinitol also changes.
As the concentration of D-arabinitol in the urine is proportional to its concentration in the serum, the concentration of D-arabinitol in the serum and urine increases significantly when the yeast load is high.
